Skerries Restaurant takes its name from some of Scotland's most northerly islands, drawing inspiration from our own Orcadian heritage. The fruit of the rich waters around Orkney and Shetland are transformed into seafood dishes bursting with style and flavour by our expert chef. The best of the season's game and prime Scottish meats such as beef and lamb also vie for attention on his innovative menus. This emphasis on excellence makes Skerries as popular with Edinburgh's own resident 'foodies' as it does with guests of the hotel. Fine dining indeed!

Meet the chefs.....

Michael Brice - Head Chef

Michael has been with us at Dunstane for 8 years out of his 31 year
career having previously worked all over Edinburgh, Paris and the South
of France. Michael's particular culinary passion is seafood and this
pairs him up ideally with the vision of directors Derek and Shirley who
are also passionate about their seafood - guided by their Orcadian
roots.

Brian McConnachie

The newest member of Dunstane Hotels is our new chef, previously the
head chef of the infamous 'Outsider' restaurant in Edinburgh. As well as
bringing his own personal brand of humour and vocal abilities to the
Skerries kitchen, Brian is keen encourage "modern, healthy cuisine with
my own brand of variety".
